When we consider breakfast eggs, the simple options like hard-boiled or scrambled often come to mind. However, my method of preparation is a bit different. This dish utilizes tomatoes, but it's not the typical shakshuka, although it might seem similar. It's easy and quick to make, satisfying, and it gives you the morning energy boost that we all need. I particularly enjoy making it on cold days when venturing out into the frosty morning seems especially daunting. After enjoying this breakfast, I always feel more refreshed and ready to tackle the day.

Hard-boiled eggs in a bed of tomatoes

Hard-boiled eggs often go it alone, but when combined with grated tomatoes and a helping of cheese, they truly shine. As the old saying goes, breakfast is the most important meal of the day. With such a breakfast, you truly kickstart your day in royal style.

Ingredients:

  • 3 eggs,
  • 1 tomato,
  • A handful of chives,
  • 1 clove of garlic,
  • Salt and pepper to taste,
  • Vegetable oil,
  • Yellow cheese.

Method of preparation:

  1. Place the eggs in a pot, cover them with water and add a liberal pinch of salt. Boil them for about 8-10 minutes from when the water starts to boil. Once done, peel them and cut in half.
  2. Wash the tomato and grate it.
  3. Heat a little oil or olive oil in a pan and saute the grated tomato.
  4. Add salt, pepper, and finely chopped or crushed garlic.
  5. Mix in the chopped chives.
  6. Arrange the egg halves over the sauteed tomatoes, yolk side down.
  7. Sprinkle generously with grated yellow cheese and cover the pan with a lid. Fry for a few minutes until the cheese has melted.
  8. Before serving, top your dish with extra chopped chives.
  9. Serve your prepared eggs dish with slices of fresh bread.
