Button mushrooms contain a large amount of water that can result in a mushy, tasteless dish if not handled correctly. Prevent this by heating the frying pan with oil on high heat and adding the chopped mushrooms. Be mindful not to add too many mushrooms, as this will lower the temperature and cause excessive water release.

Fry the mushrooms for several minutes before adding salt to prevent further water release. Continue frying until they turn golden, stirring frequently.

Recipe for Mushrooms with Soy Sauce and Wine


  • 1.32 lbs of mushrooms,
  • 0.63 cup of dry white wine,
  • 3 cloves of garlic,
  • a small dried chili pepper,
  • some parsley,
  • 1.5 tablespoons of light soy sauce,
  • salt and pepper to taste,
  • oil.


  1. Wash the mushrooms and chop them into smaller pieces.
  2. Dice the garlic and crumble the chili pepper.
  3. Heat some oil in a pan and sauté the garlic and chili pepper.
  4. Add mushrooms and soy sauce. Continue frying until the mushrooms soften and change color.
  5. Add the wine and let simmer for 5 minutes or until the alcohol evaporates.
  6. Season with salt and pepper.
  7. Garnish with parsley and serve.
