Fruits and vegetables with intense colors, like plums, red onions, eggplants, and beets, are loaded with essential vitamins and minerals. The vibrant color is attributed to natural pigments, classified as anthocyanins. These substances lessen the likelihood of type 2 diabetes insulin resistance, enhance resistance against viral and bacterial infections, and decrease excessively high levels of harmful LDL cholesterol in the bloodstream.

Notably, a disrupted lipid metabolism can promote atherosclerotic changes that may result in heart diseases such as ischemic heart disease, heart attack, and stroke. Additionally, anthocyanins possess potent antioxidant properties, thereby protecting us from harmful free radicals and cancer and slowing down the natural aging process.
