Pumpkin offers numerous benefits. It's low in calories, with only about 30 calories per 100 grams (3.5 ounces). Despite being low-calorie, pumpkin is rich in fiber, which aids digestion and provides a lasting feeling of fullness. It's also a source of various vitamins and minerals. Pumpkin contains vitamin A in the form of beta-carotene, which is essential for maintaining healthy eyes and skin. Vitamins C and E act as powerful antioxidants, supporting the immune system and protecting cells from damage. There are numerous reasons to savor pumpkin dishes as often as possible during the fall.

How to prepare pumpkin for roasting?

Preparing pumpkins for roasting is simple, but knowing a few tricks can ensure the best results. Start by thoroughly washing the pumpkin under running water to remove any impurities. Cut it in half and remove the seeds with a spoon. You can even roast the seeds later for a tasty snack.

It's best to roast the pumpkin cut into smaller pieces. Choose Hokkaido or butternut pumpkins. Hokkaido pumpkins have soft skin that doesn't require peeling and stays intact during roasting. The butternut pumpkin offers a unique, slightly sweet, and nutty flavor.

Roasted pumpkin: Alone or with spices

Pumpkin is typically roasted at a temperature of 355-390°F for about 30-45 minutes until it becomes tender. You can roast it plain or add a bit of olive oil, salt, pepper, and your favorite spices. Roasting smaller pieces allows for better control over their softness. Roasted pumpkin works excellent as a base for soups, purées, or as a salad ingredient. Roasting enhances its flavor and aroma, making the pumpkin perfect as a standalone snack or side dish for dinner.

How to roast pumpkin in the oven?

        

  1. Preheat the oven to a temperature of 355-390°F.
  2. Wash the pumpkin, then cut it into smaller pieces with the skin on, removing the seeds. You can sprinkle your favorite spices, such as ginger, chili, or curry, depending on the dishes you'll be using it for.
  3. Place the pumpkin pieces on a baking sheet lined with parchment paper, lightly brushed with olive oil. You can also drizzle them with additional olive or other oil on top. This prevents the pumpkin from drying out and makes it crispy.
  4. Put the prepared pumpkin into the preheated oven and roast it for about 30-45 minutes. The pumpkin will be ready when the flesh becomes tender.
  5. Remove the pumpkin from the oven and let it cool. Then scoop out the flesh from the skin with a spoon, and blend it into a smooth puree using a blender.
