Ingredients:

- About 3.3 pounds of pork neck,
- About 1.76 pounds of bacon,
- 1 onion,
- 2 green chili peppers,
- 2 red chili peppers,
- 3 cloves of garlic,
- 1/2 bunch of parsley,
- 1 tablespoon of sweet paprika,
- 1 teaspoon of ground cumin,
- 1 teaspoon of hot paprika,
- 1 tablespoon of salt,
- 1 teaspoon of pepper,
- 2 tablespoons of grill seasoning.

How to make:

Step 1. Begin by preparing the bacon. Cut it into two layers, about 0.4 inches thick. Place them under plastic wrap and use a meat mallet to flatten them further.

Step 2. Next, address the pork neck. Slice it into two layers, also about 0.4 inches thick. Set aside the remaining pork neck for later; it will be needed. Flatten these layers with a mallet as well.

Step 3. Grind the remaining pieces of pork neck using a meat grinder.

Step 4. Using a food processor, finely chop the onion, peppers, garlic, and parsley. Mix these with the ground pork, adding sweet paprika, ground cumin, hot paprika, salt, and pepper. Stir thoroughly with a kitchen spatula.

Step 5. On the countertop, lay out a layer of bacon on a board. Season with grill seasoning, then add a layer of the flattened pork neck.

Step 6. Add a layer of the ground meat mixture followed by another portion of pork neck, more grill seasoning, and a final layer of bacon.

Cover the stack with another cutting board and refrigerate for 3 hours.

Step 7. After refrigeration, cut the stack into smaller squares and skewer them. Grill each side for about 10 minutes.

Step 8. Serve the skewers garnished with fresh, chopped parsley. Enjoy your meal!
