Once again, the simplest solutions often turn out to be the best. You can easily transform a large pot of broth into a delicious American-style soup. Serve it with vegetables and pieces of chicken. You can add noodles or rice, making a second course unnecessary.

On the second day, consider making a classic tomato soup from the broth—this is a great option. However, if you want to try something different, just add two ingredients, and the soup will take on a completely different character. Since I discovered the idea for creamy broth, I often return to this recipe. This particular soup, with added ingredients, pleasantly warms and lifts the spirits.

How to make flavorful broth?

Even if you plan to make creamy broth immediately, ensure the stock is delicious. The best results come from using two types of meat. Chicken serves as the base, but adding a bit of beef will give the stock more depth. You can also follow the advice of adding two cloves to the broth. This will ensure the soup is not bland.

Recipe for creamy broth

Cook the stock in the usual manner. Cover the meat with water and cook until tender. Skim the scum, add soup vegetables, a bay leaf, and allspice. When the vegetables are tender, reduce the heat to keep the broth just slightly heated, allowing it to gradually absorb flavors. Before creaming the soup, make sure the stock is not cloudy. If skimming the scum isn’t enough, try other methods of clarifying the broth.

Ingredients:

  • 1 whole chicken
  • About 11 oz of beef with bone
  • A bunch of soup vegetables
  • Onion
  • 3-4 bay leaves
  • 3 grains of allspice
  • 2 egg yolks
  • About 7 oz of heavy cream
  • Salt and pepper to taste

Instructions:

  1. Start the meat for the broth. Once it's tender, add the soup vegetables and an onion roasted over the burner. Skim the scum.
  2. Add bay leaves and allspice. Cook for about 2 hours over low heat. Remove the meat and vegetables from the stock.
  3. In a separate bowl, mix the yolks with the cream. Add hot stock, then pour it into the broth. Stir the mixture and heat for a little longer over low heat.
  4. Season to taste with salt and pepper. Serve with pieces of meat and diced vegetables in bowls.

Suggestions for additions to creamy broth

Creamy broth with chicken and vegetables can be served with noodles, rice, or drop dumplings. It also tastes great with mini croutons made from toast bread. Sprinkle the soup with fresh dill or parsley for added flavor.
