Every now and then, we all find ourselves longing for some indulgent red, processed meat. Nobody here is innocent - we're all guilty of these cravings. For years, nutritionists have preached the principles of moderation and nutritional consciousness when it comes to such foods. In a nutshell, anything can be part of your diet, provided you don't leave it to chance. That's why it's worth investing in high-quality sausage. However, there are times when we don't consume the entire sausage in one go and a piece inevitably ends up chilling in the fridge. Our go-to option for such leftovers typically extend to scrambled eggs or sandwiches. But what if we injected a dose of innovation and tried an absolutely zany—but phenomenal—recipe for... sausage pancakes? Apart from the star ingredient, you would also need kefir, eggs, cheddar cheese, a handful of spices and a lot of spirit. We certainly aren't short on the latter! Are you up for it? If yes, let's dive into the recipe!

  1. Grate the sausage using the medium holes on your grater. Repeat the process with the cheddar cheese. Rinse, dry and finely chop the chives.
  2. Crack the eggs into a bowl and blend them with kefir. Stir in flour, baking powder, and spices until you get a fairly consistent mixture. Mix in the sausage, cheese, and chives. Season with salt, pepper, and dried garlic.
  3. Use the prepared batter to fry pancakes. Pour the batter into hot oil, allowing it to brown for around 3 minutes before flipping it over. Drain the excess oil on a paper towel. Serve your pancakes with a dollop of ketchup and savor every bite!
