The peasant pot is a one-pot meal that is particularly useful when we aim to utilize leftover food from the fridge. The recipe presents versatility, allowing you to incorporate your preferred vegetables and meat. Besides the recommended ingredients, cabbage, carrots, zucchini, and parsley make beautiful inclusions. If marjoram or sweet paprika aren't to your liking, they can be eliminated from the recipe or replaced with spices of your preference.

Ingredients required for the peasant pot:

  • 10.5 oz of sausage
  • a few slices of bacon (optional)
  • pepper
  • onion
  • tomato
  • 4 cloves of garlic
  • 4 potatoes
  • 1.6 quarts of broth
  • tomato puree
  • salt
  • pepper
  • sweet and hot paprika
  • marjoram

Instructions for the peasant pot:

  • For preparation, you will need a large pot with a thick bottom.
  • In the pot, sauté chopped bacon, sausage, onion, and garlic.
  • Add the entire broth and let it simmer over medium heat.
  • Add the diced potatoes, pepper, and tomato.
  • Add herbs and spices to the mixture.
  • Continue cooking for 15-20 minutes until the vegetables are tender.
  • Add the tomato concentrate, mix well, and let it cook for a bit longer.
  • Serve with fresh bread or a baguette.
