Ingredients:

  • 1 3/4 cups all-purpose flour,
  • 2 teaspoons baking powder,
  • 2 eggs,
  • 1 packet of vanilla sugar,
  • 2 tablespoons vegetable oil,
  • 1 cup milk.

Preparation:

Step 1. Melt the chocolate Santas in a double boiler or microwave. Break them into smaller pieces to help them melt faster.

Step 2. Spread the melted chocolate onto a sheet of parchment paper in dollops. Place in the freezer for about 2 hours.

Step 3. In a bowl, combine the wet ingredients—eggs, milk, and oil. In a separate bowl, mix the all-purpose flour, vanilla sugar, and baking powder. Add the dry ingredients to the wet ingredients and mix until the batter is smooth and lump-free. Let it stand for 30 minutes. Allowing the batter to rest enables the baking powder to fully activate, making the pancakes more delicate and fluffy.

Step 4. Heat vegetable oil or clarified butter in a pan. Pour a portion of the batter, place a piece of frozen chocolate on it, and cover with another portion of batter. Cook on both sides for about 2 minutes, until the pancakes begin to brown.
