Try these savory crepes with cheese for a tasty twist

Until recently, I had been making crepes with cheese only in a sweet version, and I must admit, it was one of my favorites. It worked well as both a dessert and a light meal. That's why I wasn't enthusiastic about trying a savory version of crepes with cheese. However, I quickly changed my mind.

Crepes with cheese in a sweet variation have been a popular vegetarian dish for many years. We can find them at nearly every milk bar, frequently made at home. Children adore them, and the love for this dish never fades. That was certainly true for me as well.

Crepes like cheesecake

I've been preparing crepes with sweet quarks for years, and my children have grown to love them. I would season the cheese in various ways, perfectly blending with spices such as vanilla or cinnamon. Sometimes, I would add an egg yolk, a traditional ingredient in quark recipes for crepes, as used by our grandmothers. Occasionally, I would mix in raisins, orange peel, or cranberries. When using low-fat quark, I would enhance it with sour cream or cream cheese. I always aimed to make the filling resemble the taste of cheesecake.

Savory cheese filling for crepes

I was proud of my sweet crepes with cheese, so I was surprised when my son asked to try them in a savory version. He enjoys quark seasoned with chives and garlic and thought it would make a good filling for crepes. He convinced me, and now we often make crepes with quark featuring stronger flavor accents. They are great for dinner and can be complemented with a delicate sauce. Of course, I haven't forgotten about the sweet version. After all, variety in the kitchen is essential.

Savory crepes with cheese: recipe for a delicious filling

Ingredients:

  • 1 lb semi-fat quark (preferably from a local dairy),
  • 2 cloves of garlic,
  • 3 tablespoons of sour cream,
  • chopped chives or dill to taste,
  • a pinch of paprika,
  • salt and pepper to taste.

Instructions:

  1. Crush the quark with a fork, add the sour cream, and mix well.
  2. Press the garlic through a garlic press and add it to the mixture. Season to taste with spices, and finally, add the finely chopped greens.
  3. Mix everything thoroughly. Use this prepared filling to stuff the crepes.
