However, Italian delicacies like gnocchi have increasingly appeared in our kitchens. But there is something even more delicate and melt-in-your-mouth: gnudi. These Italian dumplings require only a few ingredients and patience to impress with their taste.

Recipe for gnudi

Ingredients:

                  
  • 2 lbs of ricotta,
  • 7 oz semolina or polenta,
  • 4 oz grated Parmesan,
  • 1 teaspoon grated nutmeg.

Preparation:

  1. Place chilled ricotta in a large bowl. Add grated Parmesan and nutmeg, then mix thoroughly.
  2. Form small balls from the mixture, resembling Silesian dumplings but without the hole in the middle.
  3. Dredge the dumplings in semolina or polenta.
  4. Set the dumplings aside in the refrigerator for 12 hours. There is no need to wrap or cover them.
  5. After 12 hours, dredge the dumplings in flour again and refrigerate them for another 12 hours.
  6. After 24 hours, repeat the dredging and resting process for another 12 hours.
  7. After 36 hours, the gnudi are ready to cook. They should be dry and firm to the touch.
  8. Bring a large pot of salted water to a boil.
  9. Drop the dumplings into the boiling water and cook for 2-3 minutes.
  10. Remove them with a slotted spoon as soon as they float to the surface.

How to serve gnudi?

Gnudi can be served in many ways. Traditionally, they are paired with browned butter and sage. They can also be topped with tomato sauce, pesto, cream, or mushrooms. Gnudi also works excellently as a side dish to meat or fish dishes.
