Who bought too much sausage for the long weekend? Surely, a large group of us. It happened to me too, so I made a dish based on it that the whole family loved. So, I can say that nothing went to waste!

Cooking with Leftover Sausages

The most beautiful month of the year started wonderfully. No one could complain about the weather during the long weekend, and probably only a few didn't take the opportunity to prepare meals in the open air. Of course, grilled dishes reigned supreme from the grill!

Common sense at the market

During the long weekend, I planned several gatherings with friends and family. I wanted to ensure nothing was missing and that there was something for everyone. I knew I had gone overboard at the shopping stage. Everything looked beautiful at the market, so besides sausages and meat, I also bought a lot of vegetables. Exactly... that's a common mistake. We forget that besides dishes from the grill, our guests will also be eating salads and appetizers and will definitely want to save room for dessert!

Delicious and economical

What was left the most after the May feasts? Sausage. Although it was delicious and of good quality, it lost out to other goodies. Such sausage can be reheated on the grill the next day. However, after the long weekend, we long for lighter dishes, as far as that's possible with this meat. That's why I decided to add a lot of seasonal vegetables, canned tomatoes, and some mushrooms to it. It's a great way to consume the leftovers from the long weekend tastefully.

Grilled sausage baked with vegetables — recipe

  

Ingredients:

                                                                                      
  • 4-5 grilled sausages
  • 1 onion
  • 11 ounces of mushrooms
  • 1 red or yellow bell pepper
  • half a zucchini
  • 1 can of tomatoes
  • 1 teaspoon of mustard
  • Salt, pepper, oregano to taste
  • Oil for frying
  • Chives or parsley for serving

Preparation:

                              
  1. Peel the onion and cut it into thin slices. Sauté it in a little oil. Then add the cleaned and thinly sliced mushrooms.
  2. Clean the bell pepper of seeds and cut it into thin strips. Finely chop the zucchini. Add the vegetables to the mushrooms and stir. When the vegetables are sautéed, add the canned tomatoes. Cook for a while.
  3. Season the dish with oregano, pepper, and salt, and mix again. Finally, add the grilled sausage. Heat the whole thing for a while longer. Serve the dish sprinkled with greens.
