  • 2 cups of milk
  • 1.5 cups of sparkling water
  • a pinch of salt
  • a tablespoon of oil

For the filling

  • 1 onion
  • 1 red bell pepper
  • 2 cloves of garlic
  • 7 oz of ground beef
  • 1 teaspoon of hot paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of sweet paprika
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • a tablespoon of oil

How to make it:

  1. Begin with the crepes. Combine all ingredients in a bowl and mix well to prevent lumps. Feel free to substitute your preferred crepe recipe, but remember to omit sugar.
  2. Allow the batter to rest for 20 minutes.
  3. Cook the crepes in a hot pan until lightly browned.
  4. Proceed with the filling: Warm the oil in a pan and sauté the chopped onion, diced bell pepper, and minced garlic until softened.
  5. Add the meat and cook until it's thoroughly browned.
  6. Stir in all the spices for an even mix.
  7. Lay a portion of the filling on each crepe, sprinkle with cheese, and roll them up.
  8. You can fry the rolls briefly in the pan to melt the cheese or bake them with tomato sauce and extra cheese until bubbly.
