Cauliflower is often underrated despite its tremendous culinary potential. We usually serve it as a side dish, often in the form of boiled florets with a bit of breadcrumbs and butter. However, it's worth thinking outside the box and preparing cauliflower in a completely new, tastier way. Today, I present a recipe for cauliflower cutlets that can easily compete with their meat counterparts in taste and aroma.
Cauliflower cutlets - recipe
Ingredients:
- 1 large cauliflower
- 3-4 cloves of garlic
- A few tablespoons of olive oil
- About 2 fl oz of light soy sauce
- 2 tablespoons grated Parmesan
- Salt, pepper, sweet and hot paprika, a pinch of dried oregano
Instructions:
- Preparing the cauliflower: Wash the cauliflower thoroughly. Then, cut it into slices approximately 0.8 inches thick. Place them on a baking sheet lined with parchment paper and lightly greased with olive oil.
- Preparing the marinade: In a bowl, mix a few tablespoons of olive oil, crushed garlic, soy sauce, salt, pepper, sweet and hot paprika, and oregano. Add Parmesan and mix well.
- Marinating the cauliflower: Using a silicone brush, coat the slices with the prepared marinade on both sides. Make sure each piece is well covered.
- Baking: Place the baking sheet with the cauliflower cutlets in an oven preheated to 350°F. Bake for about 15-20 minutes until the cauliflower is tender. It is a good idea to turn the cutlets over halfway through baking and turn on the convection function at the end to lightly brown the vegetable and give it some crispiness.
- Serving: Cauliflower cutlets can be served in many ways. They taste great sprinkled with chopped cilantro and drizzled with lemon juice. You can also serve them with garlic sauce or ajvar, which adds an extraordinary touch to the dish.
The basic recipe for cauliflower cutlets can be freely modified. You can experiment with different herbs and spices, add your favorite vegetables, such as zucchini or eggplant, or coat the cutlets in oatmeal or sesame seeds.
