Transform your brunch: Falafel waffles with tahini delight
Waffles are mainly associated with summer trips to the seaside, where they tempt with whipped cream, syrup, and fruits. Few people know that they also work great in a savory version. Falafel waffles with toppings taste so good that they can easily replace a meal.
Each bite is simply an explosion of flavor. The waffles hide the full power of oriental spices such as cardamom, paprika, cumin, and aromatic herbs like cilantro and parsley. But that’s not the end of the deliciousness, because the falafel waffles are topped with a tasty tahini sauce and vegetable toppings. A lot is going on, but everything forms a perfectly matched composition.
What is falafel?
Falafel is a popular Middle Eastern dish loved by millions around the world. It is a type of vegetarian ball or patty, with chickpeas as the main ingredient. Chickpeas are a good source of plant protein. Falafel most often finds its way into wraps and vegetarian kebabs, and it also appears in salads or with hummus.
In our recipe, however, they have been transformed into delicious waffles. This version will appeal to all lovers of new flavors.
Falafel waffles
They are crunchy and delicious, and the addition of lentils makes them more filling. A simple sauce with sesame tahini and vegetable toppings completes the dish. The given proportions will make about 8 waffles. Remember to soak the chickpeas beforehand - in this recipe, you can use both cooked or jarred, as well as soaked.
Ingredients:
Waffles:
- 14 oz cooked chickpeas
- 14 oz soaked chickpeas
- 1 cup fresh cilantro
- 1 cup fresh parsley
- 1 onion
- 2 cloves of garlic
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 teaspoon cardamom
- ½ teaspoon cinnamon
- about 1 tablespoon salt
Tahini Sauce:
- 1 cup natural yogurt
- 1.4 oz tahini
- 1 clove of garlic
- ½ teaspoon cumin
- ⅓ cup water
- ½ teaspoon salt
- juice of half a lemon
Toppings for one serving:
- 0.7 oz pickled red cabbage
- 0.7 oz cucumber
- 2 cherry tomatoes
Preparation:
Step 1: Grind or blend the cooked and soaked chickpeas.
Step 2: Place parsley, cilantro, peeled onion, and garlic in a food processor and chop. Add the resulting mixture to the chickpeas.
Step 3: Add paprika, cumin, cardamom, cinnamon, and salt, and mix thoroughly. The mixture is quite dense.
Step 4: Form balls from the mixture. Place them in the waffle maker and close it, thus flattening them.
Step 5: Prepare the sauce. Mix natural yogurt with tahini, pressed garlic, cumin, salt, and lemon juice. Add water to make the sauce thinner.
Step 6: Add a portion of pickled cabbage, sliced cucumber, and tomato. Drizzle additionally with the sauce and garnish with chopped parsley. Enjoy!
