Recipe for Toadstool Salad

The Toadstool Salad is an unconventional appetizer that brings a touch of humor and freshness to the table. Its striking appearance quickly makes it the star of any party, and its simplicity encourages preparation for various occasions.

Ingredients:

  • 9 oz tortellini pasta (preferably with mushroom filling),
  • 6 oz marinated mushrooms,
  • 2.5 oz white part of a leek,
  • 5 oz red bell pepper,
  • 2-3 tablespoons mayonnaise (about 2-3 oz),
  • 2-3 tablespoons sour cream, 18% fat (about 2-3 oz),
  • 1 teaspoon mustard,
  • fresh dill,
  • dried garlic,
  • salt and pepper to taste.

Preparation:

  1. Cook the tortellini in salted water according to the package instructions, ensuring they don't fall apart. Once ready, strain and transfer them to a large bowl to cool.
  2. Next, prepare the other ingredients. Cut the white part of the leek in half, rinse it thoroughly, dry it, then chop it into small cubes. Add the leek to the tortellini and mix.
  3. Wash the red bell pepper, remove the seeds, cut it into small cubes, and finely chop the dill. Add both ingredients to the bowl with the pasta and mix everything together.
  4. Drain the mushrooms from the marinade and cut them into quarters, then add them to the salad.
  5. In a separate bowl, prepare the dressing by mixing the mayonnaise, sour cream, mustard, salt, and pepper.
  6. Add the dressing to the salad bowl and mix thoroughly to ensure all the ingredients are well combined.
  7. Finally, season the entire dish with salt, pepper, and dried garlic if needed. Refrigerate the salad for at least an hour to let the flavors meld.

Additional tips:

  • The Toadstool Salad can be enhanced by adding diced pickles or radishes to the base for more flavor variety.
  • You can also add a layer of finely chopped onion or chives for added zest.
