Ingredients:
Meat:
- About 2.87 lbs of pork loin.
Marinade:
- 1/2 cup of canola oil,
- 2 tablespoons of soy sauce,
- 2 tablespoons of lemon juice,
- 2 tablespoons of honey,
- 3 cloves of garlic,
- 1 tablespoon of Dijon mustard,
- 1.5 teaspoons of sweet paprika,
- 1 tablespoon of dried oregano,
- 1.5 teaspoons of salt,
- 1 teaspoon of pepper.
Stuffing:
- 2 red bell peppers,
- About 4.23 oz of grated mozzarella,
- 1/2 cup of chopped parsley.
Side dish:
- About 2.82 lbs of potatoes,
- 5 tablespoons of canola oil,
- 1.5 teaspoon of salt.
Preparation:
Step 1. I kick off the recipe by preparing the marinade for the pork. I combine: canola oil, soy sauce, lemon juice, honey, peeled and crushed garlic cloves, Dijon mustard, dried oregano, sweet paprika, pepper, and salt.
The ingredients are thoroughly mixed with a kitchen whisk, unfolding the perfect flavor blend.
Step 2. Next, I commence work with the pork. I initially cut the meat in such a way as to yield a single, rectangular piece, which I pound further with a meat tenderizer. The prepared marinade is then spread on the meat using a kitchen brush. Finally, the meat is rolled into a tight roll.
Step 3. I then prepare the stuffing for the future roll. I segment the peppers into smaller pieces and discard the seeds. They are then sautéed covered on a hot, oiled pan with salt added.
After sautéing, I move the pepper pieces to aluminum foil and leave them to cool. Finally, I peel the skin from the red peppers and cut them into tiny cubes. The cheese is grated on a large-hole grater, and the parsley is finely chopped.
Step 4. The pork is next in line. I unroll the meat and then arrange three layers of sautéed peppers, mozzarella, and parsley on it. In the end, the pork is rolled into a large roll and secured with butcher's twine.
Step 5. The prepared meat is placed in a baking dish, and I spread an additional layer of marinade on top. The pork is then covered with baking paper and aluminum foil.
The meat is then slid into a preheated oven for 40 minutes. The oven should be set at around 356 degrees Fahrenheit.
Step 6. After 40 minutes, I discard the paper and foil. I arrange chunks of potatoes around the meat and drizzle them with canola oil. Lastly, they are seasoned with salt.
The dish is then returned to the oven, this time for 25 minutes.
