Today, I'm going to share an exceptional dinner recipe that is sure to be a hit with the whole family. Why am I so sure? Well, it stars two universal favorites — chicken and potatoes.

Usually, when someone mentions "chicken and potatoes" for dinner, the image that comes to mind is mashed potatoes paired with breaded chicken cutlets. But it doesn't always have to be this way, as you'll soon discover.

Our recipe for today is a quick and easy but utterly delightful casserole. The main cast, of course, is chicken and potatoes, but there are other delectable surprises too: yellow cheese, corn, and a variety of aromatic spices. It's a veritable feast in a dish!

This creamy chicken and potato casserole will wow you from the very first bite!

Ingredients:

  • 3 chicken breast fillets,
  • 10.6 oz of corn,
  • 3 large potatoes,
  • 7 oz of shredded cheddar.

For the egg mixture:

  • 3 eggs,
  • 6.3 fl oz of 18% cream,
  • 1.5 teaspoons of sweet paprika,
  • 1 teaspoon of dried garlic,
  • 1 teaspoon of turmeric,
  • 1.5 tablespoons of dried oregano,
  • 1 tablespoon of salt.

Procedure:

Step 1. Begin by peeling and thoroughly washing the potatoes. Cut them into small cubes and parboil them in salted, boiling water for about 15 minutes.

Step 2. While the potatoes are cooking, prepare the chicken breasts. Wash them thoroughly, clean them, and pat them dry. Next, cube the chicken.

Step 3. The final component of the casserole that needs to be prepared is the egg mixture. Combine the eggs, cream, sweet paprika, turmeric, dried garlic, dried oregano, and salt in a large bowl.

Use a kitchen whisk to thoroughly mix these ingredients and achieve an optimal blend of flavors.

Step 4. Place a baking dish on your kitchen counter and layer the bottom with the drained, parboiled potatoes. Next, distribute the chopped chicken evenly over the potatoes.

Step 5. Then sprinkle the corn and pour the egg mixture into the dish. Mix the ingredients well before placing the dish in a preheated oven for 40 minutes at 350 degrees Fahrenheit.

Step 6. While the casserole is baking, grate the yellow cheese using a coarse grater. After 40 minutes, spread the cheese over the baked casserole and return the dish to the oven for an additional 15 minutes.
