This yogurt cake could have many names. Cloud? Duvet? Marshmallow? After these three suggestions, you're sure to realize that you'd be hard-pressed to find another treat so fluffy and melting in your mouth. Of course, this effect is due to the presence of the main character in the recipe — Greek yogurt.

Compared to regular yogurt, Greek yogurt contains slightly more fat, protein, and density. Let's put it bluntly: it is one of our favorite food products, so when we first saw a recipe used it for a cake, we were amazed. Could it be the perfect thing at hand? Homemade cheese from Greek yogurt has been done — now it's time for "cloud" cake!

Fluffy yogurt cake

Ingredients:

  • 4 room temperature eggs,
  • About 14 ounces of Greek yogurt,
  • 3 tablespoons of sugar,
  • 3 tablespoons of cornstarch,
  • 1 teaspoon of baking powder,
  • 1 pinch of salt,
  • A bit of lemon juice,
  • powdered sugar.

Method of preparation:

  1. Crack the eggs and gently separate the yolks from the whites (here you will find three interesting ways to quickly perform this task). Add sugar to the yolks and blend until it forms a thick mass. Beat the whites with a pinch of salt into stiff peaks.
  2. To the yolk mixture, now add cornstarch, followed by Greek yogurt. Stir everything together, and then gradually add in baking powder and pour in a bit of lemon juice.
  3. Next add the beaten egg white peaks to this mixture. Gently fold them in with a spoon.
  4. Pour the batter into a cake pan lined with parchment paper. Bake for 40 minutes in an oven preheated to 338 degrees Fahrenheit, then let it cool in the appliance. Decorate with powdered sugar and it's ready. Enjoy!
