Combining orzo pasta, tuna, and vegetables will delight everyone. It's a tasty alternative to the somewhat overdone gyro or vegetable salads.

Tuna and orzo pasta salad

Orzo pasta is a type of pasta that resembles rice grains in shape. It can be added to soups, but it works best in salads, especially in this one, which also includes filling canned tuna and cherry tomatoes.

This orzo, tuna, and cherry tomato salad is healthy, light, and nutritious. Instead of heavy dressings, olive oil serves as the binding ingredient. It's perfect for dinner, a hit at parties, and when taken to work, it'll make your colleagues at the next desk jealous.

Ingredients:

                    
  • 5 oz orzo pasta,
  • 10 cherry tomatoes,
  • 1 tablespoon olive oil,
  • 1/4 teaspoon salt,
  • 2 tablespoons chopped parsley,
  • 1/2 lemon,
  • 1 small red onion,
  • 1 can of tuna in its own juice,
  • Salt and pepper to taste.

How to prepare:

  1. Cook the orzo pasta according to the package instructions. After cooking, drain it thoroughly.
  2. In a small bowl, mix the olive oil with chopped parsley, salt, pepper, and juice squeezed from half a lemon. For additional aroma, add grated lemon zest and a small clove of garlic pressed through a garlic press.
  3. Cut the cherry tomatoes in half.
  4. Peel and finely chop the onion.
  5. Drain the tuna and flake it with a fork.
  6. Add the prepared sauce, cherry tomatoes, onion, and flaked tuna to the bowl with the cooked pasta.
  7. Gently mix everything together so the ingredients are well combined.

You can serve the salad immediately after preparation or chill it in the refrigerator. Enjoy!
