During communion receptions, white desserts traditionally take center stage. If you're looking for a cheesecake recipe that can compete with a traditional cake, I have something special for you. It's not only elegant in appearance but also offers a wonderful taste experience.

The highlight of a communion reception is often the dessert. While a cake is frequently chosen, it's not the only option. Other sweets can serve just as well, especially when they are white. A perfect choice for this occasion could be a no-bake cheesecake. It's refined and can be easily prepared at home.

Opt for bucket cheese

No-bake cheesecake is considered the king of spring and summer desserts. It shines during warm days and pairs well with fruits like strawberries, raspberries, or blueberries.

Bucket quark is ideal for this recipe, as it simplifies the preparation process. Similar to a traditional baked cheesecake, it requires much less work. There are no lumps, and the cheese mixture is silky smooth.

What to look for when choosing cheese?

The mixture made from bucket cheese tends to be more delicate in flavor and less dense than cheese that you need to grind yourself. It's worth using one that has proven successful in other baked goods. It should have a firm, dense consistency, so it doesn't slip off the spoon. A clear indicator of quality cheese is that it's lump-free and doesn’t float in whey. Additionally, pay attention to the ingredients; they should be minimal, without starch, dyes, or thickeners, and sugar-free. It's better to sweeten the mixture to your taste preference.

Cheesecake with or without a base

You can create a base for the cheesecake using simple sponge cakes. Opting for ones with chocolate and jelly will alter the taste. Ground biscuits mixed with melted butter also consistently deliver great results.

Alternatively, you can make a cheesecake without any base. The dessert will still be stable, allowing you to focus solely on preparing the mixture. To enrich the flavor, consider adding heavy cream and white chocolate to the cheese.

No-bake cheesecake perfect for communion

This recipe doesn't include gelatin. The cheesecake sets thanks to jellies, and I recommend lemon-flavored ones as they impart a pleasant aftertaste. Delicate, transparent jellies are also a great choice. Though the cheesecake's pure white color is eye-catching, you can serve it with fresh fruits. Ideally, finely chopped strawberries with mint will complement it. Such a refreshing dessert is sure to be a hit with the guests.

Ingredients:

  • 2.2 lbs bucket quark for cheesecake,
  • 3 packets of jelly and 1.5 cups of boiling water,
  • 0.8 cup heavy cream (30%),
  • Powdered sugar to taste (optional),
  • 10.5 oz high-quality white chocolate,
  • 1 teaspoon vanilla paste (optional).

For the base:

  • 5.3 oz biscuits,
  • 1.8 oz melted butter.

Method of preparation:

  1. In a food processor, blend biscuits and butter until the cookies are finely crushed. Line a cake pan with the mixture, achieving a wet sand-like consistency.
  2. Melt the chocolate using a double boiler and set it aside to cool.
  3. Transfer the jellies to a container and pour boiling water over them. Stir until dissolved and set aside.
  4. Whip the heavy cream until stiff, adding powdered sugar towards the end.
  5. Combine the thickened jelly, bucket cheese, melted white chocolate, and vanilla paste (optional) with the whipped cream. Blend thoroughly until the mixture is smooth.
  6. Spread the cheese mixture over the prepared base and smooth the top.
  7. Chill the cheesecake in the refrigerator for several hours, preferably covered, to prevent it from absorbing other scents from the fridge.
