  • 1 carrot
  • 1 onion
  • 1/2 cup water
  • 2 ounces of corn flour
  • 2 ounces all-purpose flour
  • 2 ounces grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon granulated garlic
  • Salt and pepper

Preparation of zucchini casserole – step by step

Zucchini casserole not only tastes delicious but is also very easy to prepare. Just a few steps, and you'll be enjoying this aromatic and crispy dish.

Step 1: First, slice the zucchini into thin slices, grate the carrot, and finely chop the onion. Transfer all the vegetables to a sieve placed over a bowl, season with salt, and mix. Set aside for 30 minutes to let the vegetables release their water.

Step 2: After 30 minutes, squeeze the vegetables thoroughly to remove the excess water and transfer them to a bowl. Do not discard the vegetable water—it will be used in the next step.

Step 3: Add the corn flour and all-purpose flour to the water squeezed from the vegetables. Season with salt, pepper, granulated garlic, and dried rosemary. Mix all the ingredients thoroughly and then gradually add water, stirring, until a thick batter forms.

Step 4: Mix the batter thoroughly with the previously squeezed vegetables. Then, transfer the entire mixture to a baking dish greased with olive oil and sprinkle grated Parmesan cheese on top.

Step 5: Place the baking dish with the zucchini casserole in an oven preheated to 375°F and bake for about 40 minutes until the top is golden and crispy.
