Summer salad sensation: Corn, tomatoes, and avocado delight
In the summer, we are more likely to reach for light dishes. It's an excellent opportunity to discover new flavors and combinations and to get into summer salads. This recipe is one of my favorites.

A salad with corn, tomatoes, and avocado is perfect for a light snack or lunch and pairs well with grilled dishes. It’s a delicious way to sneak more vegetables into your daily diet. When the grilled pork neck appears on the table, everyone forgets about it and immediately grabs the salad bowl. I eat it instead of dinner in the heat when I have no appetite for anything heavy and meaty.
Summer salad with corn and avocado
It was the hit of the party and a refreshing snack in one. It’s sweet, thanks to fragrant summer tomatoes and corn. The onion adds crunch, cilantro, and lime, bringing freshness, and the whole dish is complemented by delicious avocado. It’s the taste of summer wrapped in a tasty salad.
Ingredients:
- 1 boiled corn
- 4 oz cherry tomatoes
- 1 red onion
- Juice of 1 lime
- 1 avocado
- Salt and pepper to taste
- Fresh cilantro
Preparation:
Step 1. Wash the tomatoes and cut them in half. Add the sliced red onion and boiled corn. Pour in the lime juice.
Step 2. Add the diced avocado and fresh cilantro leaves. Season the dish with salt and pepper to taste, and mix well. The salad is now ready. Enjoy your meal!
