Stress-free Easter: Easy cheesecake and lemon cakes

A fluffy and creamy cheesecake doesn't need special advertising. Its delicate texture, combined with the addition of real vanilla, is enough to satisfy a sweet craving and stimulate the senses. Before the holidays, I prefer not to experiment with baked goods that might end up failing. I stick to a tried-and-true pudding cheesecake recipe.

Traditional cakes often require advanced culinary skills. When they don't turn out well, they cause stress and frustration. Is it possible to reconcile holiday traditions with health and well-being? Of course, it is. All it takes is preparing simpler baked goods or no-bake cakes. Instead of heavy creams, choose lighter additions that don't cause guilt. A light pudding cheesecake without a crust or chocolate glaze fits perfectly into this idea.

Easter desserts without stress

With Easter quickly approaching, do you feel pressured to have everything look Instagram-perfect instead of enjoying the holidays? Relax, there are still recipes that always work and don't require a pastry chef's diploma.

One such recipe is a lemon yogurt cake. Just combine yogurt with flour, sugar, and eggs, then add a little lemon flavoring, and you've got your cake batter ready. Baked in a bundt pan, it will delight your guests with its lightness and freshness.

Another option is an apple tart. A crispy crust, delicate pudding, and apples arranged in a rose shape create a combination that not only tastes good but also looks impressive. Yeast cakes with fruits and crumble are also easy to prepare. As the rhubarb season begins, why not indulge in a cake with this charming addition?

The following proportions are suitable for making a cake in a 9-inch round springform pan or an 8-inch square pan. Take the cheesecake ingredients out of the fridge beforehand to warm to room temperature.

Ingredients:

2.2 lbs ground quark cheese, 9 oz mascarpone cheese, 3 packets of vanilla pudding (1.4 oz each), 1 cup sugar, seeds from a vanilla pod, 7 oz melted butter, 1 cup milk, 6 large eggs, a pinch of salt.

Instructions:

  1. Separate the egg whites from the yolks. Beat the egg whites to stiff peaks with a pinch of salt.
  2. In a separate bowl, mix the quark cheese with the mascarpone cheese. Gradually add the pudding, sugar mixed with vanilla seeds, melted butter, yolks, and milk.
  3. Combine the resulting mixture with the beaten egg whites.
  4. Pour the entire mixture into a pan lined with parchment paper and place it in an oven preheated to 340 degrees Fahrenheit.
  5. Bake for 60 minutes, then turn off the oven but leave the cheesecake inside to cool.
  6. Once cooled, you can remove it from the pan, dust it with powdered sugar, or drizzle it with chocolate glaze.
