Stir up a Scandinavian feast: Irresistible Norwegian fish soup in just 30 minutes

Scandinavian cuisine remains an enigma to many, but it's most naturally associated with fish. This is unsurprising, given Norway's reputation for salmon. A particular favorite is the fiskesuppe. Preparing this recipe can be likened to making a Polish vegetable salad - everyone adds a personal touch. Some prefer only the meat of white fish, while others blend different types.

Norwegian fish soup

This soup consists of simple and readily available ingredients. It primarily depends on cod and salmon, but peeled shrimp can also be included. The soup only needs half an hour to cook, making it great for busy days. Consider serving it on Christmas Eve and Christmas Day for a delightful surprise.

Ingredients:

  • 7.05 oz. salmon filets,
  • 7.05 oz. cod filets,
  • 3.52 oz. peeled shrimp,
  • 1 leek,
  • 2 garlic cloves,
  • 2 carrots,
  • 1 lemon,
  • 2 tablespoons flour,
  • 0.85 cups milk,
  • 0.85 cups 30 percent cream,
  • 1.7 cups fish broth,
  • 0.42 cups white wine (optional),
  • Salt and pepper to taste,
  • Fresh chives or dill,
  • 1.06 oz. butter for frying.

Method of Preparation:

  1. Boil water with salt in a pot. Add the fish filets and shrimp.
  2. Cook for a few minutes until the fish is cooked. Remove the fish and shrimp to a plate, breaking them into smaller pieces.
  3. Peel the carrots and leek. Slice the carrots and finely chop the leek. Crush the garlic.
  4. Melt the butter in a pan and sauté the carrots and leek for a few minutes.
  5. Add the sautéed vegetables, lemon juice, crushed garlic, wine, milk, and flour to the boiling broth. Stir well.
  6. Blend the cream with a few spoons of hot broth in a cup, then add it to the soup. Stir until well combined and season with salt and pepper.
  7. Add the fish and shrimp pieces to the soup. Let it simmer for a few more minutes.
  8. Serve the soup garnished with chives or dill.

You can enhance the soup by adding a chili pepper. I usually serve it with pieces of bread. If you prefer a less "fishy" taste, the fish broth can be replaced with vegetable broth.
