For those who do not consume alcohol, it's perfectly fine to omit the wine. However, it's worth noting that wine enhances the flavor of the entire dish, and the alcohol completely evaporates during the cooking process.

Ingredients required for goulash soup:
- 2 tablespoons of butter
- 1 onion
- 1 clove of garlic
- 0.66 lbs of pork shoulder
- 1 teaspoon of ground sweet paprika
- A pinch of hot paprika powder
- 2 sprigs of thyme or 1 teaspoon dried
- 1/2 cup of white wine
- 3.5 cups of broth
- 1.54 lbs of fresh tomatoes or 1 cup of canned tomatoes
- 1 teaspoon of tomato concentrate
- 1 red pepper
- 3 potatoes
- 2 tablespoons of chopped parsley
Preparation:
- Melt butter in a pot with a heavy bottom
- Add diced onion and garlic and sauté everything
- Add the diced meat and sear it on every side
- Add the spices to the pot: paprika, thyme, and let them cook for a while
- Pour in the wine and let it simmer for 1 - 2 minutes, then add the broth
- Stir in fresh or canned tomatoes and tomato concentrate
- Season everything with salt and pepper and simmer for about an hour
- Add diced pepper and potatoes, stir, cover, and cook until the potatoes are tender
- Serve with garnished bread, parsley, and a dollop of sour cream
