Asparagus Quesadilla

If you're searching for a simple yet impressive snack perfect for springtime, look no further than the asparagus quesadilla. Asparagus and cheese are encased within the wheat pancake, creating an impeccable pairing. Feel free to include other beloved vegetables in your quesadilla, such as bell peppers, onions, or mushrooms.

Quesadillas can be delightfully complemented with salsa, guacamole, or sour cream. Additionally, for those who enjoy a bit of meat, consider adding fried bacon or chicken pieces to the mix.

Ingredients:

  • 2 wheat tortillas
  • Olive oil
  • 5.3 oz mozzarella cheese
  • 3.5 oz cheddar cheese
  • 1 bunch of green asparagus
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tomato salsa

Preparation:

  1. Begin by washing the asparagus and trimming off their woody ends. Then, cut them into pieces approximately 2 inches long.
  2. Heat a tablespoon of olive oil in a pan and sauté the asparagus pieces for about 3 minutes or until they slightly soften. Season with salt and pepper according to your preference.
  3. Grate the cheeses using a coarse grater.
  4. Place one tortilla on a heated pan.
  5. Sprinkle half of the grated mozzarella cheese over one-half of the tortilla.
  6. Evenly distribute the sautéed asparagus over the cheese.
  7. Add the grated cheddar cheese atop the asparagus.
  8. Cover everything with the second tortilla.
  9. Fry the quesadilla for 2-3 minutes on each side or until both sides of the tortilla are golden and crispy.
  10. Cut the quesadilla into triangles and serve it alongside tomato salsa.

For those who prefer their food with a bit more kick, consider adding chili or jalapeño peppers to the filling. Enjoy your meal!
