Tartar sauce - what's the secret?

Spicy tartar sauce traces its roots back to the 18th century, when recipes for it appeared in cookbooks published in cities like London and Paris. Classic tartar sauce is incomplete without pickled mushrooms and pickles, which provide a distinctive, bold flavor. It pairs well with eggs, cold meats, and fish, and it also makes a great addition to sandwiches and salads. In the spicy version, slight modifications to the ingredients create a new, even more intriguing flavor.
