Tortilla is a simple, inexpensive, and filling dish. We often say this about potato-based dishes, but it is true. These vegetables perform exceptionally well. Tortilla like in Spain
Ingredients:
- 2 potatoes,
- olive oil,
- 1 onion, sliced into feathers,
- 1.8 ounces of chopped chorizo sausage, optional,
- 4 eggs,
- half a bunch of parsley, optional,
- salt to taste.
Preparation:
- Peel the potatoes and slice them thinly. Then, peel the onion and slice it into feathers. If you are using chorizo sausage, slice it as well.
- In heated olive oil, sauté the onion and potatoes. The vegetables should be soft but not brown, so there should be plenty of oil. They should be more stewed than fried.
- Beat the eggs in a large bowl. Add the sausage, parsley, and sautéed onion with potatoes. Season the mixture with salt.
- Pour the mixture into a pan and cook over low heat until browned. Afterward, flip the omelet to the other side.
