After the first bite of this delicious dessert, you will be enraptured by its flavor. It's utterly irresistible, mainly due to the combination of mascarpone, cream, and a hint of fresh fruits. This recipe is a perfect addition to your summer collection!

As the thermometer climbs past 68 degrees Fahrenheit, we unanimously declare the beginning of ice cream season. In the city, stands pop up overnight, tempting us with sweet fruit concoctions from beloved brands. It wasn't long ago when the distinct and nostalgic melody of the ice cream truck could be heard roaming the streets. Sadly, those days are behind us...

Given this, it's no wonder our craving for ice cream remains strong throughout spring and summer. But is venturing out into the city and shelling out $2.40 per scoop the only solution? Not! We're excited to share a delectable frozen dessert made of mascarpone. These homemade creamy ice creams have become one of our favorite ways to experience the joy of an Italian vacation without needing plane tickets.

Summer dessert with Mascarpone

Ingredients:

  • 8.8 oz of mascarpone cheese,
  • 5.3 oz of cream,
  • 3 tablespoons of maple syrup,
  • 1 teaspoon of vanilla essence,
  • 1 cup of fruits: strawberries and blueberries.

How to prepare:

  1. Place the mascarpone cheese into a blender. Add cream, maple syrup (feel free to substitute with regular sugar or a sweetener), and vanilla essence. Blend until the texture is smooth.
  2. Gently wash the fruits and remove the strawberry stems. Feel free to incorporate other beloved summer fruits as you wish. Your options are only limited by your imagination. How about trying blackberries, raspberries, or pineapple? We would love to hear your ideas!
  3. Chop the fruits into small pieces and fold them into the mixture. Transfer the blend into containers and stash them in the freezer. After roughly 4-5 hours, your delicious mascarpone treat will be ready to enjoy!
