Ingredients:       

  • 3 large eggs
  • 1 cup sweetened condensed milk
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • Optional: lemon glaze (1 cup powdered sugar and 1-2 tablespoons lemon juice)

Preparation:

  1. In a large bowl, beat the eggs with the condensed milk.
  2. Scald the lemon with boiling water.
  3. Add flour, baking powder, lemon juice, and zest. Mix until combined.
  4. Pour the mixture into a pan lined with parchment paper. A small loaf pan works best.
  5. Bake for about 45 minutes at 340°F until a toothpick comes out clean.
  6. After the bread cools, prepare the glaze from powdered sugar and lemon juice. Drizzle it over the cake.
