Cucumber and feta rolls

Preparing the rolls takes just a few minutes. Cucumber provides water and vitamins, while feta cheese is a source of protein. It's fresh, light, and delicious. If you do not like olives, you can replace them with sun-dried tomatoes, capers, smoked salmon, or chopped herbs from the garden.

Ingredients:

  • 1 long green cucumber
  • 5 oz feta cheese
  • 2 oz black olives

Preparation:

  1. Wash the cucumber and cut it into thin slices. The easiest way to do this is with a mandoline. Do not peel it.
  2. Chop the olives and mix them with the crumbled feta cheese.
