Until recently, fries were synonymous with fast food, but today, they’ve become a gourmet dish. Despite being a worldwide favorite snack, they're notoriously high in calories, with a small portion packing about 300 kcal.

However, you don't need to sacrifice your favorite snack. We've got a recipe for healthy breaded fries that are delightfully crispy and low in calories. The secret? They're potato-free.

Deep-fried potato pieces are a universal favorite—eating a whole bowl often isn't enough. Despite their popularity, traditional fries are high in calories, with a 3.5 oz serving containing over 300 kcal. And let’s be honest, we often indulge in much more than that.

If you're unwilling to part with your beloved snack, consider substituting potatoes with zucchini. This low-calorie vegetable works wonders as a potato alternative. Try our recipe for healthy zucchini fries in a crispy, coconut shell.

Zucchini Fries — Recipe

Ingredients:

  • 2 zucchinis,
  • Half a cup of flour,
  • 1 egg,
  • 1 cup of coconut flakes,
  • Salt,
  • Pepper,
  • Oil,
  • Optionally, panko or breadcrumbs are used for extra crunch.

Preparation:

  1. Begin by washing and drying the zucchini. Slice it into long sticks.
  2. Mix the flour, coconut flakes, salt, and pepper in a bowl.
  3. In another bowl, lightly beat the egg.
  4. Coat the zucchini sticks in the egg, then roll them in the flour mixture.
  5. Heat 2-3 tablespoons of oil in a pan. Fry the breaded zucchini for about 2 minutes on each side.
  6. Enjoy your zucchini fries with ketchup or a garlicky sauce.

Tips:

  1. For an even crunchier texture, try replacing coconut flakes with Japanese panko breadcrumbs. You'll find them in supermarkets or stores specializing in Asian foods.
