Aside from chocolate, the recipe below also features other ingredients such as cocoa, cherries, and fruit jelly. Even though the list of ingredients might seem extensive and complex, the actual process of making the cake is incredibly straightforward. Anyone can handle it, and on March 8th, motivation surely won't be in short supply, right?

Women's Day Cake Recipe

Ingredients:

  • About 8.8 ounces of wheat flour
  • About 10.6 ounces of butter
  • 6 eggs
  • About 7 ounces of sugar
  • 1.5 tablespoons of cocoa
  • 2 tablespoons of poppy seeds
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder

Icing:

  • About 1 ounce of butter
  • About 3.5 ounces of dessert chocolate

Additions:

  • About 10.6 ounces of pitted cherries
  • About 8.8 ounces of 30% cream
  • 2 packs of cherry jelly
  • 1 pack of gooseberry jelly
  • Optionally: chocolate chips or nuts

Method of preparation:

  1. Separate yolks from the egg whites. Cream the butter with sugar. Add the yolks, then, continuously whipping, add flour, baking powder, and soda. Finally, using a spoon, combine these ingredients with the whisked egg whites.
  2. Divide the prepared dough into three equal parts. Mix the first batch with poppy seeds and the second with cocoa. Roll each batch out into layers and bake each for about 25 minutes at 356°F. Allow to cool.
  3. Dissolve the jellies in boiling water. Lay the cherry jelly on the third layer (the one without additions) and put it in the fridge to set. Allow the gooseberry jelly to cool, then blend it with the whipped cream.
  4. Now, it's time to assemble everything. Place a piece of the poppy-seed flavored cake on the layer with the cherry jelly. Spread the gooseberry jelly over it and refrigerate. Once it sets, position the cocoa cake layer on top and pour over the melted chocolate in a water bath.
  5. If you've chosen to use chocolate chips (or other varieties of crispy chocolate pieces or nuts), sprinkle them on top of the cake. Put the cake into the fridge, and in about 2 hours, your Women's Day cake will be ready to be enjoyed!
