It's common knowledge that eating sweets on a diet can be troublesome, but sometimes we can't resist cravings. We often surrender and have that piece of chocolate. However, sometimes we also struggle with overeating, and this can diminish diet progress. If you're among those who occasionally crave sweets, managing your calorie intake is essential. You can enjoy this fit cake without feeling guilty
Ingredients:
- 2 tablespoons of Greek yogurt,
- 3 large eggs,
- Half a cup of xylitol (erythritol can also be used - as it's nearly calorie-free, using it instead will make the cake even healthier)
- 3.5 ounces of coconut oil or clarified butter (should be at room temperature),
- Grated peel from a whole lemon (the thin and yellow part),
- Juice from half a lemon,
- 3/4 cup of cornmeal,
- Half a cup of oat flour,
- 1 teaspoon of baking powder,
- Half a teaspoon of salt (preferably sea salt).
Method of preparation:
- Mix the butter or coconut oil (depending on your choice) with xylitol or erythritol. After a while, add the eggs and mix until the mixture becomes fluffy.
- In a separate bowl, combine baking powder, salt, and both flours, which are excellent sources of dietary fiber. Add these ingredients to the earlier egg mixture, then add the yogurt, grated lemon peel, and juice from half a lemon. Mix thoroughly.
- Pour the resulting dough into a baking mold lined with baking paper. Bake in an oven preheated to 338 degrees Fahrenheit for 35-40 minutes until it appears dry.
