If you're a fan of traditional cheesecake, as I am, you'll need to adjust your mindset for this dessert. Today, we're discussing Skyrnik, an entirely distinctive type of bake. Its foundation isn't cheese but skyr, aligning perfectly with a high-protein diet's criteria.

Good for the figure

Skyr, a traditional Icelandic yogurt derived from cow's milk, is a dietitian favorite. It is especially recommended for breakfast due to its rich, high-quality protein content and low calories. Its popularity as a snack among those focused on maintaining their figure is unsurprising.

Dessert recipes have been crafted using skyr, which tastes similar to classic cheesecakes but has fewer calories. Indulging in a slice of skyr cake for breakfast or as a snack becomes a guilt-free pleasure.

Simple and delicious

The recipe for this fit cheesecake, or skyrnik, is remarkably straightforward and manageable even for teenagers. Incorporating fresh fruits like strawberries or blueberries into the yogurt mass is a treat, though I think they're best enjoyed fresh alongside the skyrnik.

This bake eliminates the need for a crumbled biscuit crust or base, reducing the calorie content and making it suitable for those avoiding gluten. Like the classic Viennese cheesecake, the essence here is in the mass—in this case, yogurt.

Recipe for skyrnik

Ingredients:

  • 4 egg whites,
  • 4 yolks,
  • 28.2 oz skyr natural,
  • 3.9 oz xylitol (or sugar),
  • 1 vanilla pudding,
  • 1 teaspoon of vanilla extract (optional),
  • 1/2 teaspoon of baking powder.

Instructions:

  1. Whip the egg whites until stiff. In a separate bowl, thoroughly mix the skyr, xylitol, pudding, extract, yolks, and baking powder.
  2. Gradually fold the whipped egg whites into the skyr mixture.
  3. Line a baking form measuring approximately 11 x 7 inches with parchment paper. Transfer the skyr cake mixture into it. Bake in a preheated oven at 356 degrees F for about 40 minutes or until the top is nicely browned.
