Cheesecake is one of those cakes that can delight both in taste and appearance. It is one of the most beloved desserts in many varieties and flavors. Moreover, cheesecake has its holiday, celebrated on July 30th. The classic cheesecake is made from quark cheese, ideally semi-fat, which is worth grinding oneself to achieve the perfect consistency. Today, we propose a royal cheesecake recipe consisting of a cheese mixture enriched with vanilla and chocolate dough. This combination makes the royal cheesecake a real treat for the palate.

How to make royal cheesecake?

Preparing the royal cheesecake is not tricky; the final result will impress your guests. Here is the list of ingredients and a detailed recipe:

Ingredients for the cheese mixture:

  • 1 cup of sugar
  • 6 eggs
  • 2.2 lbs of semi-fat quark cheese
  • 2 tablespoons of potato starch
  • 1 teaspoon of vanilla essence or a package of vanilla sugar (0.56 oz)
  • 7 oz of butter

Ingredients for the chocolate dough:

  • 1/2 cup of sugar
  • 7 oz of butter
  • 2 tablespoons of cocoa
  • 5 egg yolks
  • 2.5 cups of all-purpose flour
  • 1.5 teaspoons of baking powder

Preparation of the royal cheesecake:

Step 1: Preparing the chocolate dough

  1. Sift the flour onto a pastry board, and add cold butter, cocoa, egg yolks, baking powder, and sugar.
  2. Quickly knead the dough, then divide it into two parts—one larger (2/3 of the dough) and the other smaller (1/3 of the dough).
  3. Wrap both pieces of dough in plastic wrap and place them in the freezer for at least 30 minutes.

Step 2: Preparing the cheese mixture

  1. Grind the quark twice in a meat grinder or press it through a sieve to smooth the mixture.
  2. Melt and cool the butter.
  3. Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form.
  4. In a separate bowl, beat the yolks with sugar and vanilla essence until a light cream forms.
  5. Add the potato starch to the whipped yolks and gradually add the cheese, mixing continuously.
  6. Finally, gently fold the egg whites using a spoon or a mixer at the lowest speed.

Step 3: Assembling the cheesecake

  1. Line a baking tray with parchment paper.
  2. Grate the more significant part of the chocolate dough on a large grater and spread it evenly on the bottom of the tray.
  3. Spread the cheese mixture over the layer of dough.
  4. Grate the minor part of the chocolate dough and sprinkle it over the top of the cheese mixture.

Step 4: Baking the cheesecake

  1. Place the cheesecake in an oven preheated to 350°F.
  2. Bake for about 75 minutes until the cheesecake turns golden and is well-baked.

This delicious and easy-to-make royal cheesecake will be the perfect finishing touch to any dinner, supper, or gathering with friends. Guests will surely ask for seconds, and you will be able to showcase your culinary skills.
