Chicken dressed in a butter cloak accompanied by crispy vegetables is a definitive recipe for a successful family dinner
Ingredients:
- 0.9 lbs of soft butter,
- 1 bunch of parsley,
- 6 cloves of garlic,
- juice from 1 lemon,
- 2 tablespoons of salt,
- 1 whole chicken,
- 5 potatoes,
- 3 carrots,
- 2 red onions.
Method:
Step 1. The recipe begins with the preparation of the butter mixture. I blend soft butter divided into smaller pieces with chopped parsley, peeled and pressed garlic cloves, salt, and lemon juice.
To prevent seeds from meshing into the mixture, I squeeze the juice into a bowl using a strainer. I then mash all the ingredients together using a potato masher.
Step 2. Next, I place a cleaned and dried whole chicken on a cutting board on the kitchen counter. I evenly distribute the butter-based mixture on the meat.
I let the prepared chicken rest in the refrigerator for an hour.
Step 3. Meanwhile, I peel the vegetables, namely, potatoes, red onions, and carrots, and cut them into smaller pieces. I directly place these cut vegetables in the baking mold.
Step 4. I position the chicken on the oven rack and place both the meat and vegetables into a preheated oven for 80 minutes. During this time, the oven should maintain a temperature of 320 degrees Fahrenheit.
Step 5. Once removed from the oven, I serve the dish liberally sprinkled with fresh parsley. Enjoy your meal!
