The Nutritional Benefits of Carrot and Apple Coleslaw

Carrots and apples provide a plethora of vitamins such as A, B, and C, alongside essential minerals including potassium, phosphorus, sodium, calcium, and iron. The presence of folic acid and flavonoids is also notable, as these have anti-cancer properties.

The horseradish addition boosts the health benefits of this coleslaw even further. It's packed with antioxidants and various enzymes, including horseradish peroxidase. These substances can potentially hinder bacterial and viral growth, as well as combat diseases and inflammation due to their antioxidant properties.

Ingredients:

  • 4 carrots
  • 1 horseradish root
  • 1 sour apple
  • 1/2 cup of sour cream
  • Lemon juice
  • Salt
  • Sugar

Method of Preparation:

  1. Peel and wash the carrots, then grate them using a fine grater.
  2. Peel the apple and grate it using larger holes on the grater.
  3. Peel the horseradish, rinse, and grate on the same side of the grater as used for the carrots. Sprinkle with lemon juice to prevent it from darkening.
  4. Mix together the grated vegetables and apple, add the sour cream, and season to taste with salt and sugar.
