Are you tired of constantly cooking chicken soup, tomato soup, or sour rye soup? Do you want to try something completely new? If so, I have something that you will absolutely love!

Surprisingly, you can craft a fantastic soup based on red cabbage that tastes wonderful from the first spoonful. Plus, with the help of two kitchen tricks, you can prepare it in a colorful version. It will be something genuinely unique and original!

Prepare a delightful soup from red cabbage to enhance both taste and presentation!

Ingredients:

                      
  • 3 tablespoons of butter
  • 1 large onion
  • 2.2 pounds (1 kg) of red cabbage
  • 1 quart (approx. 1 liter) of homemade broth
  • 1 tablespoon of salt
  • 1 cup (approx. 250 ml) of 18% cream
  • 1 pinch of nutmeg
  • Juice from 1/2 lemon
  • ½ teaspoon of baking soda
  • 1/2 sprig of fresh dill for garnish

Preparation:

Step 1. Start by preparing the base of the soup. In a pot, sauté the finely diced onion.

Step 2. Next, add the finely chopped red cabbage to the pot, along with homemade broth and salt. Stir these ingredients together and let it cook for around 30 minutes.

Step 3. After 30 minutes have passed, pour 18% cream into the pot. Also, add in the nutmeg, which should be grated directly into the pot. Finally, blend the soup into a smooth cream.

Step 4. Pour 6.7 ounces (approx. 200 ml) of the soup into two separate bowls. Add baking soda to the first bowl and lemon juice to the second. Stir both mixtures until they start to change colors.

Step 5. Serve the soup in deep plates. Using a regular tablespoon, dot the soup with the colorful mixtures previously prepared.

Step 6. Finish off the dish by garnishing the soup with fresh dill. Now, it's ready to serve. Enjoy your meal!
