No New Year's Eve party is complete without a range of snacks and appetizers. Salads take the crown because of their ease of preparation and portioning. However, salads don't have to be bland or predictable. A crab stick salad can be a game changer on the party table.

A Look at Crab Stick Salad

A crab stick salad with pasta provides a light, delectable snack, perfect for every occasion. This salad quickly prepares and packs a taste that will win over even the strictest food critics. While it's fabulous for parties, it can also be an excellent choice for a light lunch or dinner.

In this salad, I incorporate orzo pasta, which resembles tiny grains of rice. You can substitute with rice noodles or plain, cooked rice for a more satiating version.

Ingredients:

  • 0.44 lbs of orzo pasta,
  • 1 small red pepper,
  • 0.22 lbs of yellow cheese,
  • 3/4 of a canned corn can,
  • 1/2 of a long cucumber,
  • 0.44 lbs of crab sticks,
  • 3 tablespoons of mayonnaise, leveled,
  • 1 tablespoon of Greek yogurt,
  • 1 large garlic clove,
  • salt and pepper as per taste,
  • 1/2 teaspoon of chopped dill.

Instructions:

  1. Cook the pasta as per the instructions given on the package. Then drain it and rinse with cold water. It's crucial to make sure it's al dente to prevent it from crumbling in the salad. Then, transfer the pasta to a bowl.
  2. Dice the pepper and cucumber and add them to the pasta. Add the drained canned corn.
  3. Cut the crab sticks into larger pieces, grate the cheese, and add to the salad along with the chopped dill.
  4. In a separate bowl, mix natural yogurt, mayonnaise, pressed garlic, salt, and pepper.
  5. Pour the resulting sauce over the other ingredients and mix thoroughly.

Store the salad in the fridge once it's ready. It can be served immediately or left for a few hours so the flavors can meld together. Bon appétit!
