Ingredients:

                      
  • 6 eggs
  • 1 red bell pepper
  • 1 onion
  • 2 tomatoes
  • 3.5 oz (about 4 oz) feta cheese
  • 3.5 oz (about 4 oz) fresh spinach
  • 2 garlic cloves
  • Olive oil
  • Dried herbs (e.g., oregano, basil, thyme)
  • Salt and pepper to taste

Preparation:

            
  1. Slice the tomatoes and bell pepper, chop the onion and garlic, and cut the feta into cubes.
  2. Place the tomatoes, bell pepper, onion, and garlic in a baking dish. Add a little olive oil, dried herbs, salt, and pepper.
  3. Mix and bake in an oven preheated to 350 degrees Fahrenheit for about 20 minutes.
  4. After 20 minutes, add spinach and crumbled feta to the vegetables. Crack the eggs on top and gently mix them with the vegetables.
  5. Bake in the oven for another 10 minutes, until the eggs are set and the omelet is golden.

Serve the omelet warm, cut into portions. You can sprinkle it with fresh herbs like parsley, dill, or chives.
