CRUST

  • 5.29 ounces of wholegrain cookies,
  • 1.41 ounces of melted butter.

CHEESE FILLING

  • 14.11 ounces of semi-skimmed or full-fat cheese (ground),
  • 17.64 ounces of canned mango pulp,
  • 2 tablespoons of lemon juice,
  • 4.59 ounces of powdered sugar,
  • 0.63 ounces of powdered gelatin,
  • 3.04 fl oz of cold water,
  • 10.14 fl oz of chilled whipping cream.

Preparation:

  1. Crush the cookies and mix them with the melted butter. Transfer this mixture to a 9.45-inch diameter baking form lined with baking paper.
  2. In a mixing bowl, combine cheese, mango pulp, lemon juice, and sugar.
  3. Dissolve the gelatin in 3.04 fl oz of cold water. Then heat it over a small flame, stirring constantly, until the gelatin dissolves. Set it aside to cool.
  4. Add a spoonful of the cheese mass to the slightly warm gelatin and mix well. Add the next two spoons, continuing to mix, checking for lumps. Start adding this primed gelatin to the cheese mixture, mixing quickly to combine the ingredients.
  5. Whip the cream until it stiffens. Add it to the cheese mixture in two portions, gently mixing in between.
  6. Pour the cheese mixture onto the cookie base. Smooth it out and refrigerate to set, preferably overnight.

  • Add favorite fruits such as raspberries, strawberries, blueberries, and bananas to the cheese mixture.
  • For a sweeter cheesecake, increase the amount of powdered sugar.
