This dish is simple and delicious, and it’s also very budget-friendly. Some enjoy it as a standalone meal, topping the potato dumplings with a generous portion of bacon and its rendered fat. Others serve it as a side dish. Regardless of how you serve them, the flavors, rooted in simplicity, remain constantly amazing.
This meal highlight the tradition of roasting and scalding flour with potatoes, a practice dating back years. They are regaining popularity, with their preparation becoming more frequent in many households. Type B or C potatoes work best due to their high starch content, making them ideal for this type of dish.
Recipe for roasted dumplings
To prepare them, simply add wheat flour to the cooked potatoes, mix with the flour, and serve with bacon fat. It's simple, affordable, and most importantly, very tasty.
Ingredients:
- 2 pounds of potatoes
- 5 tablespoons of potato flour
- 1 teaspoon of salt
- 10 ounces of smoked bacon
Preparation:
- Peel, wash, and cook the potatoes in salted water until soft.
- As the potatoes near softness, drain some of the water, leaving about 1 cup in the pot. Sprinkle the potato flour over the potato surface. Cover the pot and cook for a few more minutes until the flour swells. Do not stir the mixture.
- Mash the cooked potatoes with the flour into a smooth, slightly sticky mass using a potato masher.
- Using two spoons, form small dumplings from the potato mass and place them on a plate.
- Fry the diced bacon in a pan until crispy.
Serve the prepared dish drizzled with bacon crumbles. You can add buttermilk or your favorite sauce. They also taste great when sliced and fried in a pan. Enjoy!
