Potato patties were once widely known and often prepared. This dish was cheap and easy to make, frequently utilizing leftover potatoes from dinner. Today, you can rediscover this classic dish, but in a more modern version.
Meat patties? Not today
The first thing that comes to mind with patties? It's still meat, such as cutlets or ground meat patties. However, vegetarian versions are becoming increasingly popular because they are easy to prepare without adding meat. This doesn't mean reaching for unusual ingredients and vegan substitutes; potatoes will suffice. When you serve potato patties with a delicious mushroom sauce, the dish will be complete and indeed enjoyed by the whole family.
Are potatoes high in calories? No worries
Are you worried that potatoes are fattening? Potatoes are not as high in calories as we think. They have significantly fewer calories than grains and pasta. Early potatoes contain only 30 calories per 3.5 ounces, and late potatoes 39 calories per 3.5 ounces. They are also well-suited for diets because they are easily digestible and easily absorbed. They contain trace amounts of fat and have an alkaline-forming effect, which negates the acid-forming effect after eating meat.
Potato patties with mushroom sauce
Ingredients:
- 2.2 lb potatoes
- 2 oz all-purpose flour
- 1 small onion
- half a teaspoon of salt
- pepper, paprika to taste
- oil for frying
Mushroom sauce:
- 7 oz mushrooms
- 1 onion
- 2 fl oz white wine
- 1.4 oz butter
- 7 fl oz heavy cream (36%)
- 1 teaspoon potato starch
- a pinch of salt
- pepper and soy sauce to taste
Preparation method:
- Peel the potatoes and cut them into smaller pieces. Cook them in salted water until soft. Carefully drain the water, leaving about 0.4 inches at the bottom.
- Mash the potatoes with the flour and spices. Set aside until completely cooled. Mix thoroughly.
- Form the mashed potato mixture into patties.
- Heat oil in a pan and fry the potato patties for 3-4 minutes on each side until golden. Set aside on paper towels.
- Clean the mushrooms and slice them thinly. Peel and finely chop the onion.
- Heat the butter in a pan. Add the onion, sauté until translucent, and then add the mushrooms. Fry until the mushrooms turn golden, then pour in the white wine and sauté for a few more minutes.
- Sprinkle the mushrooms with potato starch and mix, then pour in the heavy cream. Mix and season to taste. Pour the sauce over the patties.
