Crispy pancakes with cheese and ham: Recipe

Ingredients:                                      

  • 1 cup flour
  • 2 eggs
  • 1 cup milk
  • 1/2 cup sparkling water
  • 1 teaspoon sugar
  • Pinch of salt
  • 5 ounces hard or semi-hard cheese
  • 8 slices ham
  • Herb pepper
  • Oil for frying

Preparation:                  

  1. Mix milk, sparkling water, and eggs. Gradually add flour, mixing until the batter is smooth and lump-free. Add sugar and salt, then cover and let the batter rest for 30 minutes.
  2. Meanwhile, coarsely grate the cheese and mix it with herb pepper.
  3. After the batter has rested, stir it and start frying pancakes in a lightly oiled pan over medium heat.
  4. While frying, place a slice of ham and a bit of seasoned cheese on one half of each pancake, then fold over the other half. Fry on both sides until the pancakes are crispy and the cheese melts.
  5. Serve the crispy pancakes with ketchup and garlic sauce.
