Although I typically opt for savory breakfasts daily, I willingly make an exception for these cottage cheese pancakes. They are delicious and quick to prepare, including cottage cheese providing a good dose of protein. These pancakes are topped with fresh fruit and powdered sugar and offer a superb start to the day.

Introducing cottage cheese pancakes

You may be familiar with such a feeling - a sudden hunger pang which barges in like an uninvited guest, disrupting your plans and thoughts. Your tummy rumbles louder and louder as your concentration dwindles. When faced with this situation, the most effective solution is a fast and flavorsome dish to satiate your hunger and replenish your energy. In such instances, the recipe for simple cottage cheese pancakes is a godsend.

These pancakes are perfect for breakfast, a snack, or a dessert. Even better, they only require a handful of basic ingredients and a short preparation time. Cottage cheese pancakes can be enjoyed in a variety of ways, pairing well with jams, fresh fruits, natural yogurt, and honey. More traditional toppings include powdered sugar and cinnamon.

Ingredients:

  • 8.8 oz of cottage cheese,
  • 3 eggs,
  • a cup of flour,
  • two cups of kefir,
  • oil for frying.

Method of preparation:

  1. Mash the cheese in a bowl with a fork.
  2. Separate the egg whites from the yolks.
  3. Add the yolks to the cheese and combine.
  4. Introduce the flour to the bowl, pour in the kefir, and mix with the cottage cheese and yolks.
  5. Beat the whites until stiff.
  6. Gently fold the egg whites into the cheese mixture, stirring gently with a spatula to ensure your pancakes turn out fluffy.
  7. Heat oil in a pan and scoop the batter into the pan. Fry on both sides until the pancakes turn golden brown.
