Yogurt Fruit Casserole Recipe

Ingredients:

  • 7 oz Greek yogurt
  • 3 eggs
  • 1 tablespoon of coconut flour
  • 1 teaspoon cinnamon
  • 1-3 tablespoons of erythritol or your preferred sweetener, adjusted to taste
  • 1 tablespoon of MCT or coconut oil
  • 5.3 oz of frozen berries or fresh seasonal fruits

Preparation:

  1. Mix the Greek yogurt, eggs, coconut flour, cinnamon, and sweetener in a bowl.
  2. Grease a baking dish lightly with MCT or coconut oil.
  3. Place the frozen berries or fresh seasonal fruits in the dish.
  4. Gently pour the yogurt mixture over the fruits and give it a light mix.
  5. Bake at 356 degrees F for approximately 25-30 minutes.
  6. Once baked, remove it from the oven and allow it to cool.
  7. Enjoy it warm or chilled, as per your preference.
