These alternatives are generally lighter and easier to prepare. Here are some recipes for such treats. These donuts always turn out well and quickly disappear from the plate.

Tiny, soft donuts make a great Carnival dessert. There's no need to knead yeast dough or wait for it to rise. This one stands out among the many alternative recipes because it includes pudding.

Pudding is not just for dessert

We often associate pudding with childhood desserts. Its ingredients are simple: milk, starch, sugar, and flavorings. For example, you can prepare it very quickly for a snack—it tastes great with fresh fruit or juice. That's how pudding was once associated. Today, its culinary uses are much broader.

It's essential for the iconic karpatka

Pudding, often in the form of cream pudding, is a common ingredient in the trendy layered cakes of today. It significantly enhances their taste and also enriches their texture. For years, it’s been a fantastic component of fruit cakes, like those with plums or apples. Cream based on pudding is also prepared for the iconic karpatka. During the PRL era, this dessert was incredibly fashionable, and the cream was considered exquisite.

Not just as a filling

What does this cream have to do with donuts? It has long been used as a filling, offering an alternative to traditional preserves, which has its fans. It turns out that it can also be used for the dough itself. Pudding donuts are extraordinarily light, delicate, and pleasantly flavored. We fry them in a mini version. They don't absorb much fat because, similar to traditional pastries, a bit of alcohol is added to them. They don't require filling; the vanilla flavor is entirely sufficient. Pudding can be used in two ways: by adding just the powder or after it's cooked.

Donuts with pudding powder

                  
  • 1 package of vanilla pudding
  • 2 cups of flour
  • 1 large container of natural yogurt
  • 3 eggs
  • 2 teaspoons of baking powder
  • 1 tablespoon of spirit
  • Oil for frying
  • Powdered sugar for sprinkling

Instructions:

          
  1. Sift the flour through a sieve. Add the eggs, yogurt, pudding, powdered sugar, baking powder, and spirit. Mix everything thoroughly.
  2. Heat oil in a tall pot. The temperature should be at least 340°F. Once the oil is hot, drop the batter into it using a teaspoon.
  3. During frying, the donuts will expand. Fry them until they are golden brown.
  4. After frying, sprinkle them with powdered sugar. Serve while they're still warm.

Donuts with cooked pudding

Ingredients:

                    
  • 2 cups of milk
  • 1 package of vanilla pudding
  • 3 eggs
  • 2 cups of flour
  • 2 teaspoons of baking powder
  • 1/4 cup of sugar
  • 2 tablespoons of alcohol, such as spirit
  • Oil for frying
  • Powdered sugar for sprinkling

Instructions:

              
  1. Cook the pudding according to the package instructions using 2 cups of milk. While still warm, add sugar and mix.
  2. Once cooled, add the eggs and alcohol to the pudding.
  3. Add the dry ingredients: flour mixed with baking powder and salt.
  4. Mix the dough; it should have a thick consistency.
  5. Fry spoonfuls of the dough in hot oil.
  6. Sprinkle them with powdered sugar before serving.
