Potato magic: Enjoy cheese sauce without the cheese
Cheese sauce and nachos are one of the most popular duos during visits to the cinema or as a snack. Instead of melting various types of cheese in a pot, I go for an interesting alternative.
Cheese sauce without cheese sounds like heresy. However, after trying it, you'll find it's so tasty that no one minds. When I made it for the first time, my mother-in-law couldn't believe there wasn't a gram of cheese inside, not even processed cheese. It's a delicious substitute, not only for those on a plant-based diet but also for enthusiasts of culinary experimentation and trend followers.
Potato cheese sauce
Our beloved potato is a true chameleon. Generously sprinkled with dill, it tastes like a summer memory at grandma's, sometimes turning into Belgian fries, dumplings, gnocchi, and potato pancakes. In my home, it is also the base for a delicious cheese sauce that works perfectly as a dip for nachos, chips, and vegetables. It cleverly incorporates vegetables and surprises many.
This creamy, silky sauce perfectly mimics the taste and texture of cheese, yet it is simple to make and contains no dairy or the common cashews found in vegan cheeses. The cheesy flavor is thanks to nutritional yeast flakes, invaluable in vegan cooking. They also contain B vitamins and all the essential amino acids. It's a healthier alternative to classic cheese sauce. This recipe eliminates the saturated fats and cholesterol found in traditional cheese.
Ingredients:
- 2-3 boiled potatoes,
- 1 boiled carrot,
- half a cup of nutritional yeast flakes,
- 3 tablespoons vegetable oil,
- half a teaspoon of sweet paprika,
- a pinch of hot paprika,
- 1 clove of garlic,
- salt and pepper to taste,
- water.
Preparation method:
- Transfer the boiled vegetables to a blender.
- Add the nutritional yeast flakes, peeled garlic, and oil, and blend.
- While blending, add some water to achieve a smooth consistency.
- Season to taste with salt and pepper.
The potato cheese sauce is now ready. You can season it according to your taste, enhancing its spiciness and diversifying its flavor with turmeric or colorful pepper. Enjoy!
